Recipe of the Week

Guys, this weeks recipe was a huge success (at least I thought so.)! I wanted to keep it simple because we had lots going on this past week. So, of course, I wanted pasta. Because Italian food is bomb and easy to make.

 

Being the healthy minded person I am, I wanted to try an alternative to pasta noodles. There are a ton of options these days like veggie noodles or spiralizing fresh veggies. I went with spaghetti squash because we love squash in our house! I got all of the ingredients from Whole Foods on Sunday when I did my meal prep grocery shopping.

 

It was so easy! All I did was cut the spaghetti squash in half and cleaned out all the seeds. I then rubbed olive oil on the inside and added a bit of salt and pepper. I plopped them cut side down on a pan and threw them in the oven on 400 degrees for 25-30 minutes (I did 35 minutes because I was too impatient to wait for the oven to preheat).

When the squash was finished I let it cool while I browned some lean hamburger meat and heated up the spaghetti sauce! Easy peasy!

 

I also tried another new product this week, a vegan parmesan cheese that I got from Whole Foods. I will link it here.

 

Needless to say, I thought it was all very delish but the hubby said it was only alright. But props to him for at least trying it! Here is the Pinterest recipe I followed!

Final result! Yeah its not pretty, but it was tasty!

  1. We love spaghetti squash! I’m too impatient for baking it so we use the microwave. It’s all good though.

  2. Haha totally relate to the “It’s alright” comment from the hubs. My husband is also good about trying whatever I prepare, but he will let me know if it’s not one of his faves. I just keep trying!
