At our house, we grill every chance we get. When it’s warm outside we grill out on the deck 3-4 times a week! It’s my favorite, plus there are very few dishes afterward! BONUS! With the exception of chicken (when I am home), we grill literally everything we can! I mean, we haven’t grilled pasta yet but I won’t say I’ll never try it!
With this first edition of Cooking on the Deck, I want to share my favorite meal with you! Barbecue pork chops, foil red potatoes, & asparagus! All on the grill! This is such an easy meal to throw together and doesn’t take long to cook either! Let break it down!
Barbecue Pork Chops
Obviously, first, you go to your fav grocery store and pick out some yummy looking chops! Depending on if we plan on eating this meal as leftovers, I will decide on how many chops to get.
Next step is to hit the deck! Get that grill going. We try to keep our heat set to 300 degrees when cooking pork chops.
Now for the seasoning! Our favorite combo is a pinch of garlic salt, some Greek seasoning, and a little paprika! Mmmm, making me hungry just talking about it!
Grill 7-10 minutes per side & add barbecue sauce to each side for a couple of minutes a side.
Foil Red Potatoes
So I use red potatoes because I like them the most, you can use whatever kind of potato you prefer! The first step is to cut however many pieces of foil you’ll need, 1 per person. Spray it with a nonstick spray.
Next, you’ll cut the potatoes however you’d like, chucks, small pieces, etc. Add the amount you prefer to each foil piece. I usually use the petite size and add 2-3 per foil piece.
Next, sprinkle the seasoning on top. We use garlic salt, pepper, greek seasoning, and a little olive oil. Fold up the foil piece and shake it sightly to coat all of the potatoes. Pop them all on the grill. The longer the better! We put these on very first so that they get prime grilling time. We like our potatoes tender!
Asparagus
We keep it quite simple with our veggies! I wash every stalk, break off the ends and rub them with olive oil. We have a tray that we line with foil and lay the asparagus on. I typically seasoning our veggies with greek seasoning, red crushed pepper, and cumin! So yummy!
I don’t have a set time for these, but I do make sure they are cooked long enough where they are tender and a little darker.
